I first wrote about this recipe here. Since then, this has become one of my children’s most requested breakfasts. When I first made it, my picky little Rosie refused to try it, while my son devoured approximately half the pan.
Then, out of the blue one day, Rosie decided that maybe strawberries are not the evil creation she thought they were, and gave the oatmeal a try.
Behold!
She liked it. Actually, she LOVED it. Hmmm… I think it might have been my Rosie that Sam was trying to get to try green eggs and ham.
Baked Strawberry Oatmeal
(adapted from Debbie’s Baked Oatmeal Recipe)
2 cups low fat vanilla soymilk
1 cup water
1 tsp vanilla extract
1 1/2 cups rolled oats
1/2 bag frozen strawberries, thawed (or fresh, if in season!)
1/8 tsp allspice
1/8 tsp nutmeg
1/8 tsp sea salt
Mix oats, sugar, allspice, nutmeg, and salt in small baking pan. Add strawberries. In a separate bowl, combine soymilk, water, and extract. Pour over the oat mixture, stir to combine. Bake in 375 degree oven for 30 minutes or until water is absorbed.
